Zucchini Amish Bread

1 c. Amish Bread Starter
1 c. oil
½ c. milk
3 eggs
1 tsp. vanilla extract
2 c. flour
1 c. sugar
1 ½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
2 small boxes instant vanilla pudding
1 1/2 c. grated zucchini (excess water squeezed)
1 c. walnuts
1 c. chocolate chips (optional)


In a large bowl, combine the starter, oil, milk, eggs and vanilla extract. In a separate bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon and pudding mix. Add dry ingredients to wet ingredients. Stir in zucchini, walnuts and chocolate chips. Mix and pour into two well greased bread pans. . Bake at 325 degrees for 1 hour or until done.
