Carrot Cake Amish Bread

1 c. Amish Bread Starter
1 c. oil
½ c. milk
3 eggs
1 tsp. vanilla extract
½ c. applesauce
½ c. crushed pineapple
2 c. flour
1 c. sugar
1 ½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
2 small boxes instant vanilla pudding
1 1/2 c. grated carrots
1 c. raisins
1/2 c. coconut
1 c. walnuts
1 c. powdered sugar
1 c. cream cheese, softened
½ tsp. vanilla

In a large bowl, combine the starter, oil, milk, eggs, 1 tsp. vanilla, applesauce and pineapple. In a separate bowl, combine the flour, sugar, baking powder, baking soda, salt, spices and pudding mix. Add dry ingredients to wet ingredients. Stir in carrots, raisins, coconut and walnuts. Mix and pour into two well greased bread pans. Bake at 325 degrees for 1 hour or until done. Cool completely. In a small bowl combine the powdered sugar, cream cheese and vanilla; spread over cooled bread.
